HARVEST
Each fish is bled and gutted by hand on deck immediately after landing.
CHILL & PRESERVE
Fish are placed in totes full of liquid ice to chill quickly and gently, which protects texture, prevents bruising and preserves clean flavor.
DELIVER
Fish arrive at the dock under consistent icy temperatures, maintaining premium quality and freshness through transport and processing.
How is this different than typical handling practices?
Fish are gutted/bled immediately, instead of waiting days before arriving on land for processing.
Fish are transported in small icy totes of seawater versus a large fish hold full of refrigerated sea water.
Fish are offloaded from boat to dock in small totes, no pumping required.
